Espresso Mocha Pancakes Backstory
I remember waking up and thinking what in the world am I going to have for breakfast? I looked in the fridge and saw eggs and oatmeal in the pantry. I thought to myself I do not want more eggs. I need something else that could be different for a change. I looked in the pantry and saw pre made pancake mix. I was in a pancake making mood, so I pulled the pancake mix out. I started making regular pancakes and thought how can I make these pancakes different? I decided to experiment and make expresso mocha pancakes! I hope you enjoy these pancakes and may God bless you!
Ingredients and Items Needed for Espresso Mocha Pancakes
- pan
- spatula
- medium sized bowl
- whisk
- non stick spray
- pancake mix where you only have to add water
- 1 tbps of coco powder
- 1/3 cup of water
- 1/3 cup warm temp coffee
- 1 cup of mix
- optional 1 tbps of chocolate chips
- maple syrup
- optional powdered sugar to top it off
Instructions for Espresso Mocha Pancakes
The pancake mix that I found in my pantry was the complete pancake & waffle mix buttermilk. I got mine from the store, but you can also use a mix where you just have to add water to it. A good example I found is 5 Pound Krusteaz Buttermilk Pancake Mix Just Add Water Restaurant Quality . Take one cup of mix and pour it into your medium sized bowl. Next add 1/3 cup of water into the bowl with the mix. Then you will want to whisk your mix until it is slightly thick and no lumps. Next you will want to add 1 tbps of coco powder and mix until well combined. Then you will add your 1/3 cup of warm temperature coffee. Mix together until well combined. You will notice now your batter is thinner and soupy like. Slowly add more mix and whisk until it has slightly thickened. You do not want it too thick just slightly thick. This is also when you can add your optional 1tbps of chocolate chips. If you decide to add chocolate chips, mix until well combined. Your batter is now finished and you will need to lightly grease your pan. Turn the heat up to medium. I used a non stick spray to grease my pan. Scoop some of your batter onto the pan. You will want to flip the pancake as soon as it starts bubbling. Keep an eye on it you may have to adjust the temperature based on how small or big your pancake is. The pancake should finish in a couple of minutes. The pancake should have a dark color. Scoop out onto a plate and add optional powdered sugar and pour maple syrup on them.

- 1/3 cup water
- 1/3 cup warm temp coffee I used starbucks expresso
- 1 tbps coco powder
- cooking spray
- 1 tbps chocolate chips optional
- maple syrup
- powdered sugar optional
Instructions

- Add 1/3 cup of water into the bowl with the mix.
- Whisk your mix until it is slightly thick and no lumps.
- Add 1 tbps of coco powder and mix until well combined.
- Add your 1/3 cup of warm temperature coffee.
- Mix together until well combined.
- Slowly add more mix and whisk until it has slightly thickened.
- You do not want it too thick just slightly thick. This is also when you can add your optional 1tbps of chocolate chips.
- If you decide to add chocolate chips, mix until well combined.
- Your batter is now finished and you will need to lightly grease your pan with nonstick spray.
- Turn the heat up to medium.
- Scoop some of your batter onto the pan.

- Keep an eye on it you may have to adjust the temperature based on how small or big your pancake is.
