Ingredients
- 2 kielbasas
- 3 stalks of celery
- vegetable stock(or water)
- can of crushed tomatoes
- 1 chopped onion
- optional jalapeno pepper for added spiciness
- 2 boxes of Zatarain’s Jambalaya Mix
- salt & pepper
- cajun seasoning
- 2 big chopped up bell peppers
- optional 2 big tomatoes
Instructions
The first step to this recipe is to chop up all your raw ingredients which would be the onion, bell peppers, and stalks of celery. The next step would be to get a large pot and fill it up with water. Then you would want to chop up your kielbasa into bite size pieces. Go ahead and get your rice ready. After that, you’ll want to put a tbs of coconut oil or olive oil into a large sauce pan. Then put in your kielbasa. This is the part where I season the meat. Sprinkle on some cajun seasoning, salt and pepper. Let this cook until you see the meat has darkened some. After the meat is done, throw in the onion, bell peppers, and celery in a separate pan. Cook this until translucent. Once this is done, get your big pot out. Fill it up with 2 cups of water or veggie stock. The more boxes of rice you have the more water or veggie stalk you need to put in. For example, one box of rice requires 2 cups of water. If you are using 2 boxes of rice, you’ll need 4 cups of water or veggie stalk. Throw the rice, can crushed tomatoes, and everything else into this pot. Then let this boil. Once it boils, bring it down to a simmer and cover. This can take about 25 minutes to cook. Every so often, check on it and stir.

Instructions
- Chop all raw ingredients
- Fill the pot up with water
- Chop up kielbasa into bite size pieces
- Put a tbs of coconut oil into the sauce pan
- After the oil has melted, add meat
- Sprinkle cajun, salt, and pepper on the meat
- Cook until the meat has darkened
- Throw in the onion, bell peppers, and celery in a separate pan
- Cook until translucent
- Get your big pot out
